Good fresh tuna doesn’t come cheap, but this easy recipe for a flavourful, spicy tuna tartare is a meal for a party, not just for one!

 

 

Ingredients:

1.5kg fresh tuna steak

1 1/4 cups olive oil

5 limes, juiced and grated for zest

2 1/2 tsp wasabi

2 1/2 tbsp light soy sauce

2 tbsp hot red pepper sauce

2 1/2 tbsp large-grain salt (such as kosher salt)

1 1/2 tbsp freshly ground black pepper

125g minced scallions, white and green parts (about 12 scallions)

3 1/4 tbsp minced fresh jalapeno pepper, seeds removed

5 ripe avocados

1 1/2 tbsp toasted sesame seeds, optional

 

 

Cut the tuna into 1/2cm pieces and place in a very large bowl. In a separate bowl, combine the olive oil, lime zest, lime juice, wasabi, soy sauce, hot pepper sauce, salt and pepper. Pour this mixture over the tuna, add the scallions and jalapeno and mix well.

Cut the avocados in half, remove the pit and peel to get just the flesh, then cut into 1/2cm pieces. Carefully stir the diced avocado into the tuna mixture.

Add the toasted sesame seeds if you wish and season to taste. Allow the mixture to sit in the refrigerator for at least 1 hour for the flavours to blend. Serve on crackers, and enjoy!
