Summer Greek salad

Before the last long days of sunshine run out, celebrate with this light but satisfying salad.


1 punnet cherry tomatoes, halved

1 cucumber, thinly sliced

175g halved Kalamata olives

1/2 red onion, thinly sliced

100g feta cheese

For the dressing:

6 tbsp extra virgin olive oil

60ml red wine vinegar

1 tbsp lemon juice

1 clove garlic, minced

1 tsp Dijon mustard

1 tsp dried oregano

Salt and pepper to taste

To make the dressing, combine the red wine vinegar, lemon juice, minced garlic, mustard, oregano and seasoning in a jar, cover and shake until completely mixed, then set aside.

In a large bowl, mix the tomatoes, cucumber, olives and onion. Fold the feta cheese slowly into the salad, then pour over the dressing, as much as you please, while stirring softly, before serving.
