Prepared over thin rice noodles, bami is a dish for all celebrations, and Christmas is no exception. It is one of my favourite dishes of my island, Wallis.
Ingredients:
1 fresh whole chicken
200g green beans (frozen or fresh)
Half a cabbage
1kg carrots
200g fresh shrimp
4 portions of rice noodles
4 tbsp cooking oil
1 onion/1 clove garlic, chopped finely
Light soya sauce, half a bottle
Fresh herbs
Ground black pepper
Boil the chicken in a pot of water. Meanwhile, soak the noodles in a basin of hot water for 20 minutes.
Devein the shrimps if necessary, then rinse them off. Drain the noodles and set aside. Chop up the cabbage and carrots into small pieces as you prefer.
When the chicken is cooked, drain and remove the meat from the bones. In the same cooking pot, heat some oil and fry the onion and garlic till they brown. Then add the shrimp with small pieces of chicken and the chopped vegetables, seasoning with herbs and gradually adding the soya sauce. Stir well, then serve.
