Fed up with turkey for Christmas? This pork recipe is easy to and can be served with your favourite Yuletide trimmings — in this case, carrots and potatoes, but you can pick what you like.


1kg pork ribs

1kg potatoes

1kg of carrots

2 tbsp oyster sauce

Fresh herbs

Salt and ground black pepper

For the marinade:

1 clove of garlic, finely chopped

1 small onion, chopped

2 tbsp olive oil

2 tbsp light soya sauce

Start with the marinade: Add the oil and soya sauce to a bowl and mix. Add the chopped onion and garlic and mix, then set aside.


Preheat your oven to 135C, and grease a baking dish for the pork ribs. Peel the potatoes and carrots and cut into rounds, then arrange them in the dish with the pork, seasoned with fresh herbs, salt and pepper to taste.


Roast the pork and vegetables for a few minutes, till they begin to colour, then baste with the marinade and drizzle the oyster sauce over the vegetables.


Cook for about an hour, but check at regular intervals to make sure it doesn’t overcook. Then remove from the oven, rest for a few minutes and serve.
