Hot peanut sauce

This deceptively simple Latvian sauce can be served hot or cooled, as a spread on bread or with vegetables or chips.


Ingredients:

Serves two

1 onion

1 clove of garlic

1 red chilli pepper, chopped

250ml vegetable broth

250g roasted peanuts

125g rolled oats

Spices and fresh herbs to taste


Using a food processor, grind the peanuts until slightly creamy, then set aside.

 

Clean out the food processor before grinding the oats into a fine flour, then set them aside also.

 

Roughly chop the onion and garlic and blend them in the food processor.

 

On a medium heat, sautee the onion and garlic mixture with the chopped chilli in a saucepan until slightly golden. Add the broth, turn up the heat and bring to a simmer.

 

Add the peanut mixture and stir well. Slowly add oats until the sauce reaches the right consistency for you (you can also add flour, bran or flax meal to thicken the sauce). Add spices of your preference, mix well then remove from the heat.

 

Top with chopped fresh herbs and serve.
