Malta’s twist on the pizza is ftira: meat and vegetables on dough but without the sauce.
Ingredients:
For the dough:
250ml lukewarm water
100g white flour
100g wholemeal flour
10g sesame seeds
2g oregano
1 small packet of yeast
For the topping:
1 medium-sized courgette, sliced
1/4 each of green, yellow, orange peppers
2 tomatoes, chopped
1 onion, finely chopped
200g fresh tuna or salmon
Pinch of chilli powder
Olive oil to drizzle
Toast the sesame seeds in a non-stick pan, stirring frequently until golden. In a bowl, sieve the white flour, then add the wholemeal flour, yeast, oregano, toasted sesame seeds, and water.
Using your fingers, gradually draw the flour into the lukewarm water. Knead the dough on the floured surface until firm and smooth, then cover and let stand for 30 minutes.
Slice all vegetables and the fresh tuna into strips of about 1cm, then set aside.
Roll out the proved dough and place on a pizza tin or stone. Place strips of fresh tuna on the dough and sprinkle with chilli. Cover the tuna with slices of courgettes and the remaining vegetables.
Drizzle with olive oil, sprinkle with oregano and bake in a preheated oven at 200C (180C Fan) for 30 minutes or until crisp.
Tip: sprinkle with parmesan cheese before serving.
